Pies are made to be eaten warm and fresh, and most people in Singapore buy them that way. But delivery, party orders and frozen bundles mean many pies now wait a while before anyone eats them. Rule one: the two-hour limit

How to reheat a pie in the oven

The oven gives the best crust. For a chilled pie:

  1. Heat the oven to 170C to 180C.
  2. Place the pie on a tray and cover the top loosely with foil to stop the crust over-browning.
  3. Heat a personal pie for about 20 to 30 minutes, or a whole pie for 30 to 45 minutes.
  4. Remove the foil for the last 5 to 10 minutes to crisp the top.
  5. Check the centre: it should be piping hot, at least 75C on a food thermometer.

From frozen, allow about 40 to 60 minutes at around 170C with foil on, then about 10 minutes uncovered. Larger pies need longer; check the centre every time. Air fryers are fast and crisp the pastry well, but they vary a lot. As a starting point for a chilled personal pie, use about 150C to 170C for 5 to 10 minutes. One seller suggests a two-stage method: a short microwave burst to warm the centre, then a few minutes in the air fryer to re-crisp. How to reheat a pie in the microwave

The microwave is quickest but softens pastry. Heat on medium power in 30 to 60 second bursts, with a damp paper towel over the pie, until hot right through. Then crisp the crust in an oven or air fryer for a few minutes if you can.
