What makes a good apple pie?
A good apple pie has apples that hold their shape but are fully tender, a filling that is thick rather than watery, and a bottom crust that is cooked through rather than pale and damp. The sweetness should let the apple taste through. A little acidity, from tart apples, lemon or rhubarb, keeps it from cloying.
Singapore’s humidity is hard on pastry. Apple pies keep their crust best when stored loosely covered at cool room temperature for the first few hours, then refrigerated. Warm a slice in a low oven to bring the crust back; the microwave softens it.
Lattice, double crust or crumble?
